Spring Into Brunch House Party with Maxwell House and Velveeta Recipes

I am excited that I got chosen to host a Spring Into Brunch House Party sponsored by Maxwell House and Velveeta, and I received my party kit today! My goodie box contained (shown above):

  • 1 package Velveeta

So obviously I intend to make food containing Velveeta for my house party guests.  Other hosts have been raving about Paula Deen’s Chocolate Cheese Fudge, and although the thought of cheese and chocolate together does not sound appetizing, I intend to try this recipe as they say you can’t taste the cheese and is delicious.

Velveeta Fudge Recipe

  • 1/2 lb Velveeta processed cheese, sliced or cubed
  • 1 cup butter
  • 1 teaspoon pure vanilla extract
  • 1 cup chopped nuts (I will probably omit these)
  • 2 lbs. powdered confectioners’ sugar
  • 1/2 cup cocoa

Using a saucepan over medium heat, melt the cheese and butter together, stirring constantly until smooth. Remove from heat and add the vanilla and nuts. In a large bowl sift together the sugar and cocoa. Pour the cheese mixture into the sugar and cocoa mixture and stir until completely mixed. The candy will be very stiff. Using your hands, remove candy from bowl and press evenly and firmly into a 9×9x2 pan sprayed lightly with nonstick spray. Because of the amount of butter in this recipe, pat the top of the candy with a paper towel to remove the excess oil. Place pan in refrigerator until candy is firm. Cut, eat and enjoy!

Another good (and easy) recipe that I make with Velveeta is a corn casserole that my kids love!

Corn Casserole Recipe

  • 1 cup dry spaghetti broken into 1″ pieces
  • 1 cup diced Velveeta cheese
  • 1 can cream style can
  • 1 can whole kernel corn undrained
  • 1/2 cup melted margarine

Mix all together. Bake in 2 quart baking dish at 375 degrees for a half an hour covered and than another half an hour uncovered.  I usually stir it when I uncover it as well. This is always a hit at family potlucks!

I think all of my friends, family and readers know by now that my absolute favorite food is PIZZA! I could seriously eat pizza everyday.
