Tried and True Dessert Recipes

I’ve been a baking fool this week, and made these two yum-yum-good desserts, so am sharing the recipes with y’all…
Oatmeal Peanut Butter Bars
with Chocolate Chips
1 stick butter (margarine would work, too)
1/2 cup sugar
1/2 cup brown sugar
1/3 cup peanut butter
1 egg
1 cup flour
1 cup quick oats
1/2 tsp baking soda
1/4 tsp salt
Mix all ingredients above. Bake at 350 degrees in 9×13 pan for 20 minutes. While dough bakes, mix up glaze
1/2 cup powdered sugar
1/4 cup peanut butter
1-2 TBsp milk
When you remove pan from oven, top with 1 cup chocolate chips while the base is still hot. When the chocolate starts to melt, drizzle over the glaze and blend together with a spatula. Cool before cutting (if you can resist the temptation) and enjoy.
And I just had to try the next recipe after shopping in Sioux Falls…
Cracker Barrel Double Fudge Coca-Cola Cake
1 cup Coca-Cola (I used Shasta Cola)
1/2 cup vegetable oil
1/2 cup margarine (one stick)
3 TBsp cocoa
2 cups sugar
2 cups flour
1/2 tsp salt
2 eggs
1/2 cup buttermilk (can substitute 1/2 c milk with 1/2 tsp vinegar)
1 tsp baking soda
1 tsp vanilla
In a saucepan, bring cola, oil, margarine and cocoa to a boil. Mix sugar, flour and salt in bowl. Pour in boiling liquid. Add eggs, buttermilk, soda and vanilla. Pour into a greased floured 9×13 cake pan. Bake at 350 degrees for 25-30 minutes.
Frosting:
1/2 cup margarine (one stick)
3 TBsp cocoa
6 TBsp milk
1 tsp vanilla
1 lb powdered sugar (half a bag)
In a saucepan, melt together margarine, cocoa and milk. Beat in remaining ingredients and spread over cake while it’s still hot. Cool, cut and enjoy!
Great, now I’m hungry again. What shall I bake now?
